The Interview: Eugenia Bone and Canning in City Kitchens

Eugenia Bone is a food writer, a home cook, and author of Well-Preserved, a book that teaches city cooks how to do canning and food preservation.  We talked with her about food safety, why a small kitchen is no excuse, the six different food preservation methods, and the joys of putting up jars of local tomatoes.
