With locations in Manhattan's Greenwich Village and Upper West Side, these butchers specialize in grass-finished beef, lamb and pork. Because much of their product is whole animal, they can provide less common cuts of meat, such as oxtail and flatiron steaks.
What makes them special is the combination of skilled craftsmen master butchers and sourcing their meats and poultry from carefully selected small regional producers.
They also sell free-range chickens, some charcuterie and sausages, hard-to-find items like guanciale, and during the holidays, they sell their own raw pie dough made with grass-fed beef tallow and pasture raised lard.
This is a wonderful place to order a turkey for Thanksgiving or a special roast for a holiday or other celebration.
